So it's pretty easy to drop feats from either one for archetypes. Archetype is way better than multiclass. You retain 90% of the features that give the original class it’s power (you only lose on some feats) while getting specific power from other classes. Fighter+Champion Archetype is amazing. You get both a great offensive reaction (AoO) and a great defensive reaction (Champion’s).

Champion can tank better, but fighter does more damage. Depends how you define "fun" I guess. 14 is a great champion level as you get your 2nd reaction feat. I'd suggest Redeemer, Shield ally 6 shield warden 8 quick block 10 shield of reckoning 14 divine reflexes - 2nd reaction. Can effectively block 64+ damage to an adjacent ally per round.
