Ranger, Rogue, and Sorcerer. Ranger and Rogue have a lot of versatile build options, and coming off of 5e, the Pf2e Ranger is phenomenal. Sorcerer was one of my favorite classes in 1e, though I do wish it had as many bloodlines. We'll probably get there eventually though (I need that Verdant Bloodline).
