At 40 dex the Chaos Blade does only 30 more damage than the Uchigatana. Inflicting 20 self damage for 30 enemy damage does not at all seem worth it. With the Ushi you could use a better ring in that slot (there are plenty of awesome ones, Cloranthy, Wolf Ring etc.) and e.g. the Grass Crest Shield on your back.
