Morrowind is fairly forgiving of less-than-ideal builds. Hardly anything will level with your character so it doesn't matter if you're leveling too fast or two slow. The only significant issues, in my mind, are a slow start when you're trying to use weapons with too low of starting stats, or the slowness of improving non-major/minor skills.
