A lot of people like the Fume UGS, but it requires a significant Dex investment of 30. Other weapons like the Blackknight UGS or Crypt Blacksword (technically a Greataxe) require faith or faith and int. Which is why I say go 40 or 50 str, 12 Dex, and use the Greatsword UGS, Zwei and maybe a Smelter Sword or 2. You will figure the rest out.
