Pyromancy is more fun but I like sorcery better in DS1 because of the dark magic spells from the Artorias of the Abyss DLC. Nothing is more satisfying than the sound that Dark Bead makes (and you can almost feel the "oomph" of it as you cast it). But overall both pyromancy and sorcery are way too simple in DS1.

Yes, the cap for casting speed is 45 dex, its proven. While you will notice the change in speed, its not a dramatic change. You should not go out of your build´s way to increase dex JUST for the faster speed casting.
